The double quotes in the title are deliberate as it's only loosely based on an actual Pad Thai Gai recipe I found online. Serves 2ish. - 2 Chicken breasts sliced into strips
- Enough noodles for 2
- 1 onion thinly sliced
- 2 carrots thinly sliced (on a diagonal)
- 3 spring onions thinly sliced (on a diagonal)
- 1 egg (beaten)
- heaped teaspoon of very lazy garlic (or equivalent fresh chopped garlic)
- Handful of bean sprouts
- Juice of 1 lime
- 1 tablespoon of fish sauce (Nam Pla)
- 1 teaspoon of soft brown sugar
- 1 teaspoon of chili sauce
- Some oil (I used olive oil)
Method
There looks like a lot of ingredients, but it's quite quick to cook once everything is prepped. - Cook the noodles as per the instructions on the packet (mine took 4 mins).
Drain and rinse under cold water and set aside for later. - Scramble the egg with a little oil in a hot wok for 30 seconds or so.
Set aside for later. - Fry the onion and garlic for a few mins in a little oil.
- Add the chicken and chili sauce and stir-fry until the chicken is almost cooked.
- Add the carrots and spring onions and cook for a few minutes.
- Mix the lime juice, brown sugar and fish sauce together.
- Add the above sauce, cooked noodles, bean sprouts and egg back to the pan and mix through well.
- Serve immediately.
If you're feeling adventurous, garnish with coriander and some chopped roast peanuts. | Hmm, it tasted a lot nicer than this picture looks!
